Sour and Spicy Hot Pot
This food is in coastal cities. It is a hot pot, but it is different from a traditional hot pot. The water in pot is sour and spicy.
The sour vinegar produced by the fermentation of wine lees during the brewing process is used as the soup, plus vegetables and shellfish.
The way the dishes are placed around the hot pot, regular and linear, cought my attention.
